Ingredients For This Recipe
2 cups of gluten free all-purpose baking flour
2 cups coconut milk, divided
1 tablespoon gluten free baking powder
1 pinch of salt
2 tablespoons ground cinnamon
2 eggs
2 tablespoons vanilla extract
¼ cup butter (1/4 stick)
½ cup brown sugar
5 apples, sliced
1 cup pecans
Preparation
In the 3-quart Mixing Bowl, combine gluten-free flour, 1 cup of coconut milk, gluten-free baking powder, and pinch of salt. Mix well until uniform dough is obtained.
In the 2-quart Mixing Bowl, mix 1 cup of coconut milk, cinnamon, eggs, and vanilla extract; set aside.
Preheat the 10 ½-inch Skillet at medium-high heat for about 3 minutes. Add butter, sugar, apples and pecans. Cook for 3 minutes at same temperature or until the apples are soft; stir sporadically.
Remove half of the apples from the skillet. Add half of the dough on top of the apples in the skillet; then place the rest of the apples and remaining dough. Finally cover with the liquid mixture you have set aside.
Cover with the Redi-Temp™ valve closed and cook at medium low heat for 15 minutes; turn off the stove and let it rest for 5 minutes.
