6 chicken thighs, skin removed
Salt, to taste
Pepper, to taste
2 cups chicken stock
½ yellow onion, small diced
4 garlic cloves, minced
4 tomatillos, quartered
1 bay leaf
Garnish:
Sliced jalapeño

Preparation
Season the chicken thighs with salt and pepper.
Place the Royal Prestige® Smart Temp in the Royal Prestige® MultiPan and preheat over medium-high heat. When the Royal Prestige® logo appears at the top of the Smart Temp, carefully remove it by the handle.
Add the chicken thighs and sear for 5 minutes with the lid slightly ajar. Set them aside.
Increase the heat to high, pour in the chicken broth, add the remaining ingredients, and season with salt and pepper to taste.
Return the chicken thighs to the pan, with the browned side facing up.
Cover the pan with the Whistle Knob open and cook until it whistles.
Once it whistles, reduce the heat to low, close the knob and simmer for 30 minutes.
