The tortilla is one of the stars of Mexican cuisine, whether as an accompaniment or the base for many traditional dishes. There are different types of tortillas, each used uniquely.
We start with the classic corn tortilla, the one that comes to mind for tacos: hand-sized and can be white, yellow, or blue, depending on the type of corn used. Each has a slightly different flavor, with blue corn tortillas being the hardest to find and, sometimes, more costly.
Made from wheat flour, these tortillas are lighter in color, with a very soft texture and greater elasticity thanks to the gluten. Like corn tortillas, they have flavor variations, like butter, nopal, chipotle, fine herbs, and more. In some northern states of Mexico, flour tortillas are more popular than corn tortillas.
There are also various sizes, like the “taquera” tortilla for tacos, which is smaller and is sometimes cooked with lard, or larger flour tortillas for burritos.
These tortillas can also come in different presentations: fried, toasted, or crisped, and are used in dishes like chilaquiles, nachos, tortilla soup, and more.
